Apple Cinnamon Baked Oatmeal is made with fresh apples, cinnamon, brown sugar, old-fashioned oats and milk. By using Hood’s Simply Smart low-fat milk, this is baked to creamy perfection, but without all the fat from whole milk. In fact, you may think you are biting into a freshly baked oatmeal cookie! This baked oatmeal is so easy to make and perfect for a busy weekday morning breakfast – just in time for the hustle and bustle of back to school!
Well our back-to-school went off without a hitch. James has jumped right into his sophomore year. In just his first week, he has already signed up for his inter-class play and had a meeting regarding jazz band and select chorus – both of which he will be signing up for soon enough. Add marching band to this and James will be an extremely busy guy. I hope he can juggle it all AND make the honor roll. I almost forgot to mention that he will be getting his learner’s permit this month too!
Ryan is in 8th grade. This is his last year of middle school. Where does the time go? He is also in the marching band and between that and his classes, he will be extremely busy as well.
Just recently, Ryan has decided that he really, really wants to have a furry pet. However, we can’t have any cats or dogs because three out of four of us have allergies and asthma triggered by cat and dog hair. Grant has put his foot down that as long as he is in this house, we will never have a furry pet in this house.
But what about a gerbil? Surely a teeny, tiny little gerbil, kept in Ryan’s room would not trigger anyone’s allergies. How can Grant say no to this cute little guy hanging out over at Petco?
How can he possibly say no to this (not-so-little) guy?
A gerbil is so stinking small, and would be contained 24-7. I ask again, how could it possibly trigger someone’s allergies? This will be a battle for the weeks to come. I will keep you posted on who wins!
As I mentioned, I used Hood’s Simply Smart low-fat milk in the recipe. Apple Cinnamon Baked Oatmeal
Prep. Time 25 min.
Cook Time 30 min.
Serves – 12
- 3 c. Old Fashioned Oats
- 6 c. Hood Simply Smart Low Fat Milk
- 1 c. packed Light Brown Sugar
- ½ tsp. salt
- 3 large eggs
- 2 c. diced apples
- 2 tsp. cinnamon
- For topping:
- ¼ c. Old Fashioned Oats
- 2 Tbsp. Light Brown Sugar
- Grease a 9×13 inch pan and preheat oven to 350 degrees.
- Beat the eggs in a small bowl.
- Peel and coarsely dice apples. 2 large apples is just over two cups.
- Combine oats, milk, brown sugar, salt & eggs in a large saucepan. Mix well; simmer over medium heat, stirring constantly until thickened, 15-20 min. Be careful to keep stirring or the milk may burn on the bottom of your saucepan.
- When oatmeal is thickened, add apples and cinnamon and stir to combine.
- Pour oatmeal mixture into prepared pan, top with oats and brown sugar, and bake 30 minutes or until oatmeal is set.
- Slice into 12 squares and serve as is, or add your baked oatmeal to a bowl, top with warm milk and additional brown sugar!
- Store in refrigerator for up to five days.
