That book holds a special place for our family because If You Give a Mouse a Cookie was the first book that James read aloud to us! Grant kept the book too. How great is that?
To celebrate this upcoming holiday special, I am sharing the type of Christmas Cookie that this little mouse, (and your little mice) are sure to love – Soft Sour Cream Sugar Cookies! The secret ingredient is, you guessed it, the sour cream. The sour cream adds moisture but not taste. It makes for a very soft, ,pillowy sugar cookie – the perfect cookie to share at Christmas time!
Soft Sour Cream Sugar Cookies
Yield about 20 ea. 3″ cookie
- 1 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1/2 teaspoon vanilla extract
- 3 cups flour, sifted
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sour cream
- 1/4 cup butter, softened
- 3 cups powdered sugar
- 1 1/2 tsp vanilla
- 3-4 Tbsp milk
- Heat oven to 375 degrees. Grease a cookie sheet, line it with parchment paper or use a silicone mat.
- Mix butter and sugar until well combined. Add eggs and vanilla, mix well.
- Add in all dry ingredients and mix into the wet ingredients alternating with the sour cream, until well mixed.
- Chill for 1 hour.
- Roll out on a floured surface and cut into shapes. Place on greased cookie sheet or one lined with parchment paper.
- Bake for 7-10 minutes.
- Mix all ingredients for frosting in a medium bowl, and cover with plastic wrap until you’re ready to frost.
- Once the cookies have cooled, frost them. You can add a few drops of food coloring to the frosting until it reaches the desired color. Add sprinkles. We used Jingle Mix Nonpareils.
