I made an easy Italian Dressing recipe that I found online yesterday. It was delicious! All that I can ever find in the grocery store is salad dressing made with soybean oil. Why is that? I thought of some possible explanations: 1. Soy bean oil is the cheapest oil. 2. Soy bean oil has addictive properties making us crave more. or 3. Soy bean oil has the longest shelf life. What is your best guess? It certainly has nothing to do with what is best for our health……
To keep this a low carb Italian Dressing recipe, I used Bragg’s Apple Cider Vinegar which has no added sugar and a boat load of health benefits. I was checking labels in the store today. Nearly ever vinegar has sugar in it – red wine, balsamic and even some white wine vinegars. I am trying to avoid the added sugar. Otherwise, the oregano and garlic powder have about 1 carb each. To be on the safe side, I would count a 2 Tbsp. serving as having 1 carb.
I used this dressing to marinate my chicken breast before grilling. It is so tender and delicious! I also used it on my spinach salad. This dressing is so easy and much healthier than the store bought dressings. I will be making this one again and again. Sorry Ken’s, you’ve been replaced. 🙂
Easy Italian Dressing Recipe
- 3/4 cup olive oil (I used light olive oil)
- 1/4 cup Bragg’s Apple Cider Vinegar
- 1/2 tsp Garlic Powder
- 1 tsp Dried Oregano
- 1 tsp Salt
- 1/2 tsp pepper
Mix all of the ingredients together and store for up to 1 week in the refrigerator. This makes a great marinade for chicken!
NOTE – Try fresh ingredients instead like minced garlic, chopped oregano and even add some Parmesan cheese. Just keep in mind, the dressing will not keep for as long as one week if fresh ingredients are used.
