Yesterday at School
Third grade boys are so full of it. I was watching a line of boys and caught one placing his hands on his chest right about where a woman’s breasts would be and then he made that motion like he was holding up breasts. Perhaps you’ve seen an adult do this and say something like – “She has a nice set of knockers.”
Back in my day, in third grade, I was watching PBS kids! It seems this generation is watching shows like the Simpsons, Family Guy and a boat-load of inappropriate You Tube videos and Vines.
I just stood there and the other two boys noticed that I was watching them. One boy happens to be the son of a second grade teacher. He was the first to say, “He was doing it!” Then the boy who was actually making the gesture looked at me in fear and said,”I wasn’t doing it Mrs. Maloney. I was just putting my hands here and wiping down like this.”
MmmmmmmHmmmmm. I didn’t have to say a word, the disappointing look on my face seemed to put the fear of God into this little third grader. A minute later his teacher came along and fetched his line. I almost made that I’m watching you gesture by pointing to my eyes and then pointing at him, but I didn’t. It might have sent him over the edge.
I will be watching him today though – just to make sure his gestures are all appropriate and that he is showing the “expected behavior”.
So what does this have to do with the following recipe? Well, this is my reward at night for having to deal with hundreds of kids and their issues on a daily basis. This tasty dessert keeps my carbs low and my diet sugar-free for the day and most importantly – these are delicious and satisfying!
These are made with the NuNaturals Dutch Processed Cocoa. I love this stuff. It has a nice rich color and flavor. It dissolves in liquid quickly and it is the star of this recipe! No Bake Coconut Chocolate Peanut Butter Clusters Low Carb
- 1/2 cup extra virgin coconut oil
- 2 cups unsweetened coconut flakes
- 6 Tbs. Pressed Peanut Flour (I use –
- 1/4 Cup NuNaturals Dutch Processed Cocoa Powder
- 2 Tbsp. Natural Peanut Butter (no sugar added)
- 2 Tbsp. NuNaturals Eryithritol
- 1 pinch of sea salt
- Warm the coconut oil to a liquid if it is solid.
- Combine this with the remaining ingredients in a large bowl.
- Scoop out rounded tablespoons and place on a parchment lined cookie sheet. Freeze until solid.
This makes 18 (messy) clusters as you can see above. Once they are frozen, as shown in the first photo, no more sticky mess. 🙂
Each cluster has 125 calories each. 12 grams of fat, 3.1 grams of carbs and about 1.5 grams of protein.
