I love pancakes! I’ve finally found a healthy oatmeal pancake recipe that is high protein and low fat. I have been eating these pancakes every morning now for quite sometime. It’s a very easy recipe based on the Trim Healthy Mama recipe for “e” pancakes. The only difference is that I’ve swapped yogurt for the cottage cheese. These are high protein due to the egg white and Greek yogurt and they keep me full for quite a while. This recipe is for a single serving of 3 medium pancakes. Simply double or triple the recipe as needed.
Healthy Oatmeal Pancakes
1/3 cup old fashioned oatmeal
1/3 cup plain, non-fat Greek yogurt. (I use Fage)
1/3 cup egg whites (I use the carton of egg whites)
1/2 tsp. baking powder
1/4 tsp. vanilla
1. Place the ingredients in a small blender and blend for about 30 seconds.
2. Heat a pan over medium heat.
3. Pour medium size pancakes. Flip when you see bubbles. These cook up just like regular white flour pancakes.
Top with maple syrup and blueberries. (I use the sugar free syrup.)
