Skyr is the traditional yogurt of Iceland. It is made by incubating skim milk with live active cultures. The whey, the water naturally found in milk, is then strained away to make for a much thicker, creamier, concentrated yogurt. So to make just one cup of skyr, with all that water going out, you need 3 – 4 times the amount of milk required to make a regular cup of yogurt. As a result of this process skyr comes out with 2-3 times the protein count of standard yogurt.

- Low sugar – No high fructose corn syrup, or artificial sweetners. (sweetened with organic raw Agave Nectar)
- Fat Free – Made from fat free milk, yet has a very creamy texture.

The Review –
I love to discover new healthy food that I can add to my diet. With this yogurt, it seems that I have hit the jackpot. Not only does Siggi’s contain natural ingredients, but it is low in calories (100 cals./cup), low in sugar, high in protein, has healthy live cultures and no fat. With three times the amount of milk as regular yogurt required to make one cup of Siggi’s, this is truly the thickest yogurt I have ever seen.
Grant sampled the grapefruit flavored Siggi’s and he liked it. He described it as tart, but he didn’t miss the sugar. He has actually eaten plain unsweetened yogurt (I know what you’re thinking – yuck).
I sampled the blueberry and thought it was slightly tart, but the creamy texture had me second guessing. How can this be fat free with such a wonderful creamy texture? I am a big fan of vanilla and Siggi’s Vanilla is my favorite – not quite as tart as the blueberry. It was just delicious. I haven’t seen Siggi’s in my grocery store, so I plan on asking them to order this yogurt.
I searched for recipes using Skyr and surprisingly didn’t find much. I would think that the plain Siggi’s could replace a portion of higher fat ingredients, for example like mayonnaise in a cole slaw dressing, to cut back on calories.
