The following is a guest post by my great friend, cookbook author, and foodie – Jane Doiron – who blogged over at Make Ahead Meals for Busy Moms. Jane took a break from blogging a few months ago, but her blog is still up and growing! Lisa, from the blog Flour Me With Love has taken over Make Ahead Meals for Busy Moms. Between these two blogs, there are many mouth watering recipes that you must try!
Have you ever tried the Strawberry Poppy Seed and Chicken Salad at Panera Bread? They only offer it in the summer. It’s perfect for these hot, humid days. Panera gives you a tasty fat-free poppy seed dressing to go with it. This is a very popular summer salad recipe and I am happy to be sharing it with you! It’s one of my favorites!

4 oz. pineapple tidbits, drained
1/2 to 3/4 cup strawberries, sliced
1/4 cup toasted pecans or walnuts
10 – 12 mandarin orange segments (optional)
