The Hungry Girl Diet Cookbook Review
Hungry Girl recipes are great for those that want to lose some weight and yet love to eat. It’s for those that are willing to count calories, but NOT willing to give up their favorites like Mac ‘n Cheese and pizza.
The recipes in the book are organized by meals, like breakfast, lunch, dinner, snacks and sweet treats. She also includes a go-to guide with grocery lists, money saving tips and plan ahead meal prepping and meal freezing dos and dont’s.
Hungry Girl has been criticized for using processed foods with low nutritional value in some of her recipes. However, in this cookbook, with the exception of the occasional dessert, the majority of recipes use fresh ingredients and spices. Recipes include nutritional breakdowns and serving sizes.

Overnight Oatmeal Parfait
Have you heard of “overnight” oatmeal? Overnight oatmeal is created by soaking your oats and refrigerating overnight for a quick morning breakfast. The soaking helps to break down the oats so that they are more easily digested. I wanted to give Hungry Girl’s recipe for Overnight Oatmeal Parfait a try. It looked so yummy in her photo. Here’s my photo along with the recipe shared with permission.
- 1/4 cup unsweetened vanilla almond milk
- 2 Tbsp. vanilla protein powder w/ about 100 calories per serving
- 1/2 cup old-fashioned oats
- 1 no-calorie sweetener packet – I used Stevia.
- 1/8 tsp. cinnamon
- 1 drop vanilla extract
- Dash of salt
- 1/3 cup fat-free vanilla yogurt (I used plain and my own sweetener)
- 1/2 cup sliced strawberries
- 1 Tbsp. sliced almonds or chopped pistachios
- In a medium bowl, combine almond milk, protein powder,oats, sweetener, cinnamon, vanilla extract and salt. Mix well.
- Cover and refrigerate for at least 8 hours or overnight, until oats are soft and have absorbed most of the liquid.
- Stir oatmeal, In a medium sized glass, layer half of each: oatmeal, yogurt, and strawberries.
- Repeat layering with remaining ingredients and top with nuts.
Entire Recipe – 324 calories, 8g fat, 252 mg sodium, 45 g carbs, 7 g fiber, 12.5 g sugars and 21 g protein
This made for a delicious breakfast. With 21 grams of protein, it was filling too. This is typical of Hungry Girl recipes easy and delicious. As I said, if you are a fan of Hungry Girl and her recipes, this cookbook is a must for your collection!
