With the help of nutritionists at Boston’s Joslin Diabetes Center, Harvard Sweet Boutique recently completed the development of a line of low-carb sweets that uses the same all-natural, high-quality gourmet ingredients found in their regular products. With ten unique sweets offered in 15 different configurations, there are a bounty of options for those seeking delicious, low-carb alternatives to their favorite classic sweets.

Low-Carb Peanut Butter Chocolate Chunk Cookies (from Sue George, founder of Harvard Sweet Boutique)
Nutritional information: 12g carbohydrates per 1 oz. serving
Yields approx. (36) 1 oz. cookies
- 8 oz (1 stick) unsalted butter (room temperature)
- 1/2 c peanut butter (creamy)
- 1/2 c light brown sugar
- 1/2 c sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 ¼ c flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 c semisweet chocolate chunks
Preheat oven to 350 degrees
Prepare baking sheets with parchment paper
Cream butter, peanut butter, light brown sugar and sugar with mixer
Add egg and vanilla and mix well
Sift together flour, baking soda and salt and whisk to mix
Add flour mixture to peanut butter mixture and stir until just blended
Add chocolate chunks and mix well
Bake 12-14 minutes until golden brown
