The Looneyspoons Collection Cookbook Review
This book offers much than just delicious recipes, it has weight loss and cooking tips, interesting trivia and each recipe has a corny title with a cute accompanying cartoon that may make you laugh! The authors, who are sisters, make a great team. Greta is the chef and Janet focuses on the nutritional aspects and tips (and the corny titles!) The layout and humor reminded me of Dr. Oz’s book You on a Diet, which I enjoyed very much.
Learning about any possible tricks and tips to losing weight, is something that I love to do. I enjoyed flipping through to gawk at the mouth-watering recipes AND to read page after page of healthy tips. I found out that using a blue plate verses a red plate is soothing and can help to me to slow down at mealtime. Eating eggs first thing in the morning may help me to eat less during the day.
The book contains 14 chapters of recipes, ranging from appetizers, salads, meatless dishes, chicken dishes, fish, side dishes and for those with a sweet tooth, three chapters chock-full of desserts and baked goods that have been tweaked to be a bit healthier. Those following a glute-free diet will be happy to know that this cookbook contains 150 gluten-free recipes.
I actually tried two recipes from the book. The first being the” Grainola” Bars. These are chewy granola bars with oats, flax, pumpkin, cranberries, nuts and mini-chocolate chips. This recipe was very easy to make. I just combined the dry ingredients separately from the wet ingredients and then combined the two. These cooked in about 25 minutes. Having just over 200 calories and 3.5 grams of fiber, each bar makes for a great snack or even a quick breakfast. While these were yummy and reminded me of a pumpkin muffin with a chewy consistency, they didn’t hold together as well as I’d like. I would increase the pumpkin slightly next time. Here is how these looked.
The next recipe I tried is called Baked chicken breasts with maple, mustard, lemon and dill – aka “Dilly Beloved”. Why Dilly Beloved? According to the authors, After your dinner guests try these, they will be exchanging wows of course!
These were delicious. The chicken breasts were very moist and tender and the marinade was superb. I love all of the flavors and together they made for a great combination. The mustard and maple syrup was similar to a honey mustard dressing. The addition of the balsamic vinegar and fresh dill gave this that extra gourmet flavor. I would make this one again!

Dilly Beloved
Baked chicken breasts with maple, mustard, lemon and dill
It’s the wedding of the scentury! One bite of these happily marinated chicken breasts
and your dinner guests will be exchanging wows. Easy enough for every day…fancy
enough for company.Marinade
¼ cup pure maple syrup
3 tbsp grainy Dijon mustard
2 tbsp minced fresh dill
2 tbsp freshly squeezed lemon juice
1 tbsp olive oil
1 tbsp balsamic vinegar
2 tsp grated lemon zest
1 tsp minced garlic
¼ tsp each salt and freshly ground black pepper
4 boneless skinless chicken breasts
(about 1½ lbs/680 g)Instructions
- Whisk together all marinade ingredients in a small
bowl.- Arrange chicken breasts in a glass or ceramic baking
dish that’s just large enough to hold the chicken breasts in
a single layer.- Pour marinade over chicken. Turn pieces to
coat both sides with marinade. Cover with plastic wrap and
refrigerate for at least 1 hour or up to 1 day.- Preheat oven to 350ºF. Remove plastic wrap
and transfer casserole dish to middle oven rack.- Bake,uncovered, for about 35 minutes, or until chicken is no
longer pink in the center.- Place cooked chicken on a serving platter and keep
warm.- Pour marinade and juices into a small saucepan.
- Bring to a boil over high heat and cook, stirring constantly,
until mixture thickens slightly, about 1 minute.- Pour sauce over chicken and serve immediately.
MAKES 4 SERVINGS
