Wusthof Epicure 6 inch Knife Review
The first thing I noticed when using this knife is that it is comfortable to hold. It has a smooth wood fiber handle. The two-rivet handles are made of epicurean, which is a unique wood-fiber composite used in commercial kitchens that’s ultra-durable and hygienic. This is a heavy knife, weighing nearly 8 oz., which is twice as heavy as the 7 inch knife that I was typically using.
I tested the knife out on a couple of pretty big items. The first was a fresh pineapple. The knife has strength to it that makes light work of slicing up this pineapple. One of the features of the knife is the extra knuckle clearance of the USA-made Epicurean handle.
The next big item was a spaghetti squash. This blade is a newly designed wider blade that did a great job slicing right through this spaghetti squash. I’ve used other knives that have gotten stuck inside the spaghetti squash and I’ve had to nervously wrestle with them to get them out safely without hurting myself. Below you can see how I smoothly finished the cut.
I used the knife to slice through a lasagna. Another feature of the knife is an invisible ceramic coating that is supposed to make cleanup easy. The lasagna did rinse off the knife rather easily. (For proper care, the knife should always be hand washed).
I filleted chicken breast easily and also used the knife to dice peppers and onions. The bottom line is that this is a powerful knife that cuts with precision. It’s a pleasure to use and considering all of the features, this is a very impressive knife!

It would be nice to have a sharp knife here when cutting up fruits and vegetables, its a lot safer. Some may disagree but if the blade doesn’t need to be forced then it won’t slip thus cutting a digit!

That is one great knife. When I was shopping for knives, I almost bought those, but ended up going with something less expensive (and it turns out much lower quality).

Thanks for a very thoughtful review. Love the redesigned blade, ceramic coating and the improved ergonomics, I’m a little surprised at two rivets as opposed to three,. I class we learned that the reason for triple rivets was incase on failed, there were still two to keep the blade safe within the handle, but Wusthof has always produced great knives and I trust them.

My knives are cheap and dull
When my ex-husband and I got divorced, he stayed in the house until I could legally get rid of him. While there, to earn money to support his drinking (he didn’t have a job) he had a yardsale and sold everything that was not nailed down – and some things that were! When I finally got the house back, I had to start over – I even had to buy a refrigerator. So to start I picked up a cheap set of knives and have been making due, but I’d love to have a good set again and this would be a great start!
Most of my knives are not sharp.
