Slimmer Greek Salad Pizza

Slimmer Greek Salad Pizza Recipe
2 cups Mediterranean greens such as escarole, romaine, and radicchio
¼ cup cherry or grape tomatoes
¼ cup sliced cucumber
¼ cup sliced green bell pepper
2 Tablespoons shaved red onion
2 or 3 Kalamata olives
1 oz crumbled feta cheeseFor the dressing:
2 teaspoons olive oil
A drizzle of balsamic vinegar
A pinch of dried oregano
Salt and pepper to taste1. Toss together the greens, tomatoes, cucumber, bell pepper, and onion, and place in a serving bowl. Top with the olives and cheese.
Pizza
1 individual pre-baked pizza crust
1 Tablespoon marinara sauce (for homemade, see p. 114)
½ recipe Slimmer Greek Salad, olives and feta set aside1. Preheat the oven according to pizza crust directions. Place the crust on a baking sheet and spread the sauce over. Chop the olives and sprinkle them with the crumbled feta over the sauce.
2. Bake according to package instructions until the cheese melts and the pizza is well heated and crisp on the edges, about 12 minutes. Remove from the oven and transfer to a serving dish.
3. Toss the salad with the dressing in a medium bowl and pile on top of the cooked pizza. Serve immediately.

Looks SO good. I always buy reduced fat feta, but I still feel guilty eating it because it’s still high in sodium. It’s so darn good, though.

I found fat free feta at BJ’s which is even healthier. It’s not quite as tasty, but I use it because I’m interested in healthier cooking.
Cynthia, I’ve seen fat free feta in my grocery store as well. I just don’t like the taste of it – wish I did because you are right, the recipe would have less fat in it.

I make a Greek pizza also but it’s not that healthy looking. I start with a bit of olive oil and garlic (no red sauce), pile it with fresh spinach, a little feta, some pine nuts, sundried tomatoes, just enough mozzarella and a sprinkling of fresh basil. I am actually making it tonight, the dough is resting in the fridge as I write this!

Wow – two of our favorites: Pizza and GREEK SALAD!!! All-in-one? What a great idea and wonderful family friendly way to serve a salad! And it doesn’t hurt that Greek Salad is my favorite – especially when made with all the right AUTHENTIC ingredients – like yours is. But I probably would splurge with just a little more Feta cheese and maybe a few more pitted Kalamata olives… Thanks!

I love pizza with some veggies on it, esp ones that haven’t been through the 600-800 degree oven. I wonder if this is a good way to get kids to eat more of these veggies… hmmm. Sounds delish and the fact it isn’t overloaded with high calorie items is fantastic!
