It’s not always easy to find simple-to-make Weight Watchers recipes, so I often try to come up with something on my own. For instance, I came up with the following Southwest Salad recipe just for this dressing that I discovered called Litehouse Lite Salsa Ranch. This recipe serves one and has a Weight Watchers PointsPlus value of 7.
I found this dressing in my grocery store, but it is available online at Lighthousefooods.com as well. It’s really tasty – worth coming up with a salad to enjoy it on!
Keep in mind this is really quick. (I didn’t cook my own chicken either – thanks to Perdue Shortcuts.) This would make a great dressing for a lean beef taco salad also.
Weight Watchers Recipe Easy Southwest Salad
Mixed Greens
sliced red onion
sliced roma tomato
1/4 cup black beans (1 PP)
1/2 cup Perdue Short Cuts southwestern style carved chicken breast (2 PP)
1/2 ounce Doritos crushed (2 PP) (This is 2 PointsPlus, I imagine you can find a lower fat, baked chip for 1 point)
2 Tbsp. Litehouse Lite Salsa Ranch (2 PP)
Total PointsPlus Value 7. Serves 1.

I’ve been following Weight Watchers online now for 8 weeks and I’ve lost 12 pounds. I’ve maintained and slightly gained a couple of times, but I know this is a plan that I can live with and I am in for the long haul. Slow and steady wins the race!

I am also doing Weight Watchers because I am still nursing my son and it is one of the only programs that takes that into account. And I definitely agree with you it is so easy to follow and doesn’t eliminate any foods which is a plus for me. I started about 4 weeks ago and have lost 9 lbs. And like you said I have gained a couple (thanks to Easter and weekends) but I have been able to lose them again. One website that I found that I absolutely love is skinnytaste.com. Gina has all kinds of yummy recipes that all have the Points Plus Value =D Keep up the great work!
