Remember that scene in the Wedding Crashers where Will Ferrell (Chazz) was screaming for meatloaf from his Ma?
“MA! The Meatloaf! We want it NOW!”
Well, this is that kinda meatloaf! Once you have it, you will be screaming for it!
This is a variation of the Paula Deen Meatloaf recipe in Paula Deen’s The Deen Family Cookbook, called “Aunt Peggy’s Old-Fashioned Meatloaf.” In this variation of the recipe, my sister used 1 lb. of ground turkey and the topping ingredients are doubled.
Prep Time: 15 minutes
Bake Time: 1 hour
Yield: 4 servingsIngredients
1 pound ground turkey
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 large egg
1 cup diced canned tomatoes with their juice
1/2 cup quick cooking oatsTopping Ingredients
2/3 cup ketchup
4 tablespoons brown sugar
2 tablespoon yellow mustardDirections
1. Place a rack in the center of the oven and preheat the oven to 375 F.
2. In a large bowl mix together all meatloaf ingredients well. Place the mixture into a 9×13-inch glass or ceramic baking dish and shape into a loaf.
3. Mix together the topping ingredients and spread over the loaf.
4. Bake until done, about 1 hour. Remove from the oven and let rest for 10 minutes before slicing.
