Appetite for Reduction is written by best-selling author and vegan chef Isa Chandra Moskowitz. In Appetite for Reduction, you will find 125 nutritionally balanced low-fat vegan recipes for foods like lasagna, tacos, barbecue, curries, stews and much more. I am not a vegan, today that is. Next week, that may all change. I tend to flip-flop between low carb, and some variation of Weight Watchers. But as you might know, I’ve tried the Paleo Diet too – something altogether different! You name it and I will try it. I wish I could stick to one plan. What I do know is that eating plenty of plant-based foods, like fruits and vegetables seems to be the common thread that runs through all of these diet plans. Since all of the recipes in Appetite for Reduction are all plant-based, low in fat and sugar and high in fiber, I can conclude vegan or no vegan, this is a healthy way of eating.
What I quickly learned in Appetite for Reduction is that “healthy cooking doesn’t have to mean deprivation.” Utilizing plant-based foods, Isa has created a low-calorie, low-fat, cookbook with several nutritious meals and sides that I look forward to trying. The recipes are “pantry-friendly” and most come in at 400 calories or less. The recipes have been reviewed by registered dietician Mat Ruscigno and all nutritional info. is included with each recipe.
I have never tried falafel and was looking forward to trying the deep-fried version someday. This recipe for baked falafel was the first recipe that I flipped to, so in a weird twist of fate, I finally got to try falafel, but it was Isa’s baked, healthy version!
In Isa’ version, she uses pureed chickpeas as well as chickpea flour for that extra chickpea flavor. With just two teaspoons of olive oil, the recipe was low-fat (only 4.5 grams of fat per serving). At 140 calories per serving, this dish is low-cal too. A food processor is required to puree the chickpeas, garlic and onions. The mixture was then transferred to a mixing bowl where the spices and herbs are mixed in. The mixture is formed into walnut-sized balls and flattened on a baking sheet, cooked for 16 minutes and then flipped and baked for about 10 more minutes. This was an easy recipe to follow. According to Isa, The baked falafel tastes best at room temp.
How did they taste? Considering they didn’t last long, I’d say they were excellent! I enjoyed them with red onion slices and tomato, as suggested. We like things spicy and could even increase the two teaspoons of hot sauce to 1 tbsp. I actually had to remind Grant to save some for me the next day. The next time I make this recipe, I will double it for sure!
